WHAT IS FREEZE DRYING

Freeze drying also called lyophilization is a sophisticated process that removes water from a product without ever letting it pass through a liquid phase.
First, the product is frozen; then under vacuum, the ice sublimates—turning directly into vapor. This occurs in three key phases: freezing, primary drying (sublimation), and secondary drying (desorption).
